Turkey and Rice Casserole Recipe

Ingredients:

1 tablespoon butter
1 tablespoon olive oil
2 cups cooked white or brown rice
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1 cup frozen peas, thawed
2 to 3 cups cooked diced turkey
1 can condensed cheddar cheese soup
1 cup of milk
1 teaspoon yellow or dijon mustard
1/2 teaspoon salt
1/2 cup bread crumbs tossed with 3 teaspoons melted butter
Fresh ground black pepper (to taste)

Directions:

1. Pre-Heat oven to 350 F
2. Heat oil and butter in a skillet
3. Saute onion and celery until tender 
4. In a mixing bowl, combine cooked rice, turkey, soup, milk, peas, mustard, salt, and sauteed onion / celery. 
5. Transfer the mixture to a shallow baking dish, and top with buttered breadcrumbs
6. Bake at 350 F for 30-40 min, or until heated through.
 

Tips:

Serve hot with fresh ground black pepper to taste
