1 1/2 lbs bacon
2 lbs pan sausage
1/2 bell pepper diced
1 sm onion diced
1 tsp Worcestershire sauce
Shredded cheese
Bbq rub
Heavy aluminum foil

Weave bacon on foil.
Mix sausage, Worcestershire sauce, bell pepper, and onion.
Shape meat into a log and place into middle of bacon weave. Make a crevasse for cheese in middle of sausage then seal shut.
Carefully roll bacon weave around sausage.
Rub bbq seasoning evenly on the assembled bacon loaf.

Using your favorite smoking wood (I prefer post oak), light a fire to produce ~215-250 degrees F temp of indirect heat.
Smoke bacon loaf for 4-5 hours, checking internal temperature the last hour.
Once it reaches an internal temp of 165-170 F, pull the meat from the pit and wrap in heavy aluminum foil.
Let the meat rest for 15-20 minutes before cutting into even portions.

Serve and enjoy!!

Optionally glaze it before serving!

Mix the following until sugar is dissolved
1/2 Cup ketchup
1/2 Cup brown sugar
1 tsp Worcestershire sauce
