Hearty Black Bean Soup


2 cans diced tomatoes
3 cans of low-sodium black beans
2 cans reduced-sodium chicken broth
Juice from 2 limes
1/2 cup Fresh cilantro
1 cup chopped onion
1/2 cup diced carrots
1/2 cup diced celery
1 tablespoon paprika
2 teaspoons ground cumin
1 teaspoon minced garlic
1/4 teaspoon ground cloves
2 tablespoons balsamic vinegar
sour cream for serving


1. In a crock pot (4-quart), combine chicken broth, beans, tomatoes, onion, celery, carrots, cumin, garlic, cloves, and paprika.  Stir thoroughly.
2. Cover crock-pot and cook on High for 5 hours
3. Pour in balsamic vinegar, lime juice, and stir.

Serve with a dollop of sour cream


Top with left over cilantro leaves for presentation
