Bharwan Karela


Karela(s) (Bitter squash) – 1 lb
Asafoetida (Giant fennel) – A pinch
Cumin seeds - 1 tsp
Coriander powder - 2 tsp
Turmeric powder - 1 tsp
Mango powder – 2 tsp
Red chili powder - ½ tsp
Fennel seed powder (Saunf) - 1 tsp
Chopped Onions - 1 cup
Sliced Onions - 1/2 cup
Oil - 2 tsp, and enough to fry karelas
Salt (to taste)


Bharwan Karela means Stuffed Karela

1. With a paring knife, remove the karela skins and set them aside.
2. Cut the karelas open lengthwise and remove the seeds.  Marinade karelas in lemon juice with a dash of salt for 30 minutes and set aside.

Stuffing prep:
3. Heat 2 tsp oil in a medium saucepan. Add cubin seeds, Asafoetida, and chopped onions and cook for 2-3 minutes at medium heat or until soft.
4. Chop karela skins and add to the saucepan and cook an additional 2-3 minutes.
5. Add in coriander powder, tumeric powder, and red chili powder, cooking for an additional 5-7 minutes.  Add salt to taste.

6. Rinse the karelas under running water to remove lemon/salt.
7. Using a small spoon, spread stuffing into the karelas
8. In a pot, heat fry oil and add sliced onions, mango powder, fennel seed powder.  Next, drop in stuffed karelas slowly to avoid splashing.
9. Fry the karelas for 10-12 minutes on medium heat until golden brown, rotating half way through.

Cut in half and serve over a bed of rice.  Enjoy!


Tie the stuffed karelas with a string to keep them together until serving.
